Cinnamon Carrot Spears

Add some color and flavor to your dinner with this quick and easy recipe! These roasted and coated carrots are the perfect side dish! You can even enjoy them as a light, healthy snack.


  • 8 medium carrots
  • ½ tablespoon olive oil
  • ½ teaspoon cinnamon
  • Salt and pepper to taste


Preheat oven to 400 degrees. Wash the carrots and trim off the ends. Cut each carrot into 4-inch pieces. Cut each piece in half lengthwise, then in half lengthwise again to make spears. Place carrot spears into a mixing bowl. Drizzle with the olive oil and sprinkle with the cinnamon, salt and pepper. Toss the carrots with the oil and spices until they are completely coated. Bake in a single layer on a cookie sheet for 20 minutes or until tender and browned, stirring halfway through.
This recipe makes 4 servings. Serving size: approximately 1 cup
