This easy Black Bean Burrito Bowl will hit the spot! It’s packed with protein and fiber. This vegetarian meal can also be the perfect addition to your weekly meal plan. Makes 4 servings.
- 2 cups cooked rice
- 1/4 cup chopped cilantro
- Juice of half a lime
- 1 15-ounce can black beans, drained and rinsed
- 1 15-ounce can whole kernel corn, drained
- 2 cups shredded lettuce
- 1 red bell pepper, diced
- 1 avocado, diced
- 4 tablespoons non-fat sour cream
- 1 cup salsa
Stir the cilantro and lime juice into the warm, cooked rice. Heat the beans and corn separately in the microwave until warm. Place 1/2 cup of the rice mixture into a bowl. Top with 1/4 of all remaining ingredients.
